Colombian coffees


Colombia has been producing great coffee beans since the early part of the 19th century. During the last century, coffee has become Colombia's main export. The main coffee growing regions in Colombia are: Antioquia, Risaralda, Norte de Santander, Tolima, Valle del Cauca, Quindío, Bucaramanga and Caldas, where this particular coffee originates from. Considered to be in the heart of the "Coffee Triangle", Caldas is rich in coffee history. For many years, the region held the distinction of being the most well-known and highly sought-after Colombian coffee region. Tropical rainforest conditions, volcanic soil and a wealth of rivers and streams make the area ideal for coffee growing.

Finca El Jardin


Finca El Jardin is owned by Mr. Restrepo and his family. It is located in Chinchiná, a Colombian municipality located in the Department of Caldas. Mr. Restrepo, who has been in the coffee business for over 30 years, is also the founder of INVERCAFE, Ltd, a coffee mill located in the same area.

This municipality is located in the coffee-growing region of Colombia. It is precisely in this locality where the high technology plantations for the production of coffee and one of the largest most sophisticated freeze-dried coffee processors in the world, are located.

Finca El Jardin, located between 1,460-1,500 masl, grows Caturra and Castillo varieties, and processes them in full wash, honey and natural. The farm is 170 hectares in size, with 700,000 coffee trees, which makes it a good option for a stable supply of coffees for orders on a permanent basis.

Mr. Restrepo and his son are redefining their coffee production with a hybrid approach. While they continue to devote a portion of farm to commercial production, they have been increasingly developing their specialty offerings and experimenting with new and varied processing styles. They are passionate experimenters, developing countless processing protocols to enable them to bring out the best in the coffees from their 4 specialty plots, El Jardin being one of them. They use Brix (a measurement of sugar content) to ensure that only perfect ripe cherry – cherry with about 21% Brix – is processed.

Coffee processing


Colombia’s wetter, more humid climate, makes producing Naturals more difficult. However, it makes them clean and fruity. Much of their success is due to their innovative processing methods that make producing clean, large volume Naturals possible, no matter the weather.

After selective harvesting and sorting, cherries dry in the sun in parabolic driers for 5 days. Throughout this time, workers rake cherries frequently to ensure even drying. Then, cherries dry in mechanical driers on low heat for an additional 3 days.

The family employs 12 year-round workers who carry out selective handpicking during the harvest and help with farm upkeep in the off-season. This team is paid a premium for their selective picking expertise and their full-time employment. This also helps them maintain stable income throughout the year.
