€14.00
Geisha Spirits - Colombia. Geisha. Semi Washed Anaerobic.
Every bean has a story
When you hear geisha, everyone thinks of the panamanian geisha. But this Geisha from Bella Alejandria in Colombia has elegance and a unique clarity.
At an altitude of between 1550 – 1700 meters above sea level you will find Bella Alejandria farm. This is the farm of an extraordinary man, Wilder Lazo, who grew up on a coffee farm but until 2017 he was a veterinarian by trade. This was until the day he visited his father’s farm to help and something stirred in him so he left his job to focus on specialty coffee!
His background in genetics and insatiable love of learning, led Wilder to begin a varietal program in Tocora. Since then this has grown to include more than twelve different coffee varieties from various origins. He is passionate about specialty coffee and relentless in his pursuit of excellence, and those qualities are nowhere more apparent than in this incredible lot from Wilder's farm.
Geisha Spirits is one of the jewels of Wilder Lazo’s Bella Alejandria farm, in which he has mastered the washed process. His team made this lot through a double fermentation of 200 hours with submerged anaerobic fermentation in mucilage. This helps to develop an outstanding floral and citric profile. After that, they re-fermentedthe coffee in the sun with mandarin peel for 18 days. Finally it is stabilized at his warehouse in Tocora for 25 days before milling.
