A delightful and rare Red Wush Wush from Finca Monteverde in Colombia.

 

Finca Monteverde


This coffee is produced just off the coast of Monteverde in the Monteverde Farm in Tolima, Colombia. Coffee plants grow at 1750-1900 mt above sea level. Finca Monteverde is a 15-hectare farm cultivating the unique coffee varieties of Red and Yellow Bourbon, Gesha, Wush Wush, and Mocca. It is home to Gilardo Gutierrez and his family who have over 70 years of expertise and experience growing coffee. In the last decade, the Gutierrez family has been improving their fermentation techniques and differentiated processes.

 

Processing


Known for their impeccable attention to detail, their coffee cherries are handpicked and harvested at the ripest point and then floated to remove the less dense coffee. They then undergo controlled fermentation for up to 36 hours in closed plastic tanks, before being placed in opened ceramic tanks where they are allowed to naturally ferment for 60 hours. This natural processed coffee is then dried on raised beds in a solar dryer with a clear plastic roof, allowing for airflow to maintain its low temperatures.

When the fermentation is at its targeted point, the coffee is dried in two stages. At first, the coffee dries for 3 days on raised beds in a plastic tunnel with sun and natural airflow, during this process the coffee is moved every 4 hours. The second stage happens in a mechanical silo for more than 4 days to complete the drying stage. This consistency in a cool climate results in getting a coffee that is bursting with unique fruit characteristics making it truly irresistible!

 

Variety


Wush Wush is an extremely rare variety discovered for the first time in Ethiopia. Imported to Colombia by Finca Monteverde, this variety started to develop much better in the Colombian environmental climate. The Gutierrez family has revolutionized the processing ways of Wush Wush by applying different techniques of fermentation and truly bringing out all the wonderful flavors of the Wush Wush variety.

You will taste plum, red raisin, black cherry and hints of cacao nibs. Notes of dry banana and kiwi add to the flavor complexity for a truly delightful coffee experience!
