IBRIK COFFEE


Ibrik coffee (also known as Turkish or Greek coffee) is a centuries-old brewing tradition that originated in the Ottoman Empire. Named after the small, long-handled pot used to make it (called an ibrik or cezve or briki in Greek), this method creates a uniquely strong, velvety, and aromatic cup of unfiltered coffee.

Ibrik is one of the oldest and most traditional coffee preparation methods in the world. To make it, you use very finely ground coffee. The coffee brews slowly in a small pot called an ibrik (or cezve), typically over low heat or sand.

To prepare this, the coffee is ground to a very fine, almost flour-like powder and mixed with cold water (and optionally sugar!) directly in the ibrik. The mixture is then heated slowly until it begins to foam, and finally removed from the heat just before boiling. This process may be repeated once or twice for a stronger flavor and a thicker foam.

Ibrik coffee is never boiled. Instead, it is brought just to the edge of a boil and removed. This way, it is preserving the delicate layer of foam (kaimaki in Greek, köpük in Turkish) on top.

Serving Style
One typically serves ibrik in small demitasse cups. The best part, though, is that it is often accompanied by a glass of water and a sweet treat like Turkish delight or a biscuit.
